Lunar New Year Longevity Noodles: Misua Soup

Instructions

  1. Heat peanut oil in a pot over medium heat. Sauté garlic, shallots, and tomato until softened.

  2. Add wood ear mushrooms; sauté for a few minutes.

  3. Pour in chicken broth and bring to a boil.

  4. Stir in misua and greens; season with fish sauce, black pepper, and oyster sauce. Boil 2-3 minutes until limp.

  5. Remove from heat, cover, and let cook in residual heat for 2-3 minutes.

  6. Taste and adjust seasonings, adding salt as needed.
