Lucuma Ice Cream (Helado de Lúcuma)

Instructions

  1. Bring evaporated milk to a gradual boil over medium heat in a pot.

  2. While milk heats, beat egg yolks with sugar until thick and pale.

  3. When milk boils, gradually whisk a small amount into the egg yolk mixture, then incorporate the remaining hot milk and mix well.

  4. Return this mixture to the pot; cook over medium-low heat, stirring constantly, until thickened and just barely boiling. Strain into a clean bowl and place it into an ice bath.

  5. Stir in lucuma puree, vanilla, and whipping cream, then chill the mixture thoroughly.

  6. Freeze the chilled mixture in an ice cream machine according to manufacturer's instructions.
