Low-Sugar Nectarine Preserves
A low-sugar nectarine jam recipe producing a delicious, bright stone fruit preserve.

Instructions

Start boiling water for a water bath canner.

Wash and dice nectarines, discarding pits, then place them in a heavy, non-reactive pot with a small amount of water over medium-high heat.

Bring to a boil, stirring frequently, until the fruit is translucent; then stir in sugar until fully blended.

Return to a boil and cook, stirring occasionally, until the jam reaches its set point, then stir in lemon juice.

Pack the hot jam into clean half-pint jars, seal, and process for 10 minutes in the water bath canner.
