Low-Maintenance Pork Roast
A flavorful pork roast is prepared with a simple olive oil, thyme, and garlic marinade, requiring just a few ingredients.

Preheat the oven to 450 F.

Place the roast in a shallow pan.

Combine olive oil, thyme, marjoram, garlic, dry mustard, salt, and pepper in a bowl to form a paste, then rub this mixture over the roast.

Let the pork stand at room temperature for 30 minutes.

Roast the pork for 20 minutes, then reduce the oven temperature to 300 F without opening the door.

Continue roasting until the internal temperature reaches 145 F, which is approximately 18 to 23 minutes per pound.

Cover the roast and let it rest for 5 to 10 minutes before carving.

Alternatively, roast the pork at 350 F for 20 to 25 minutes per pound until it reaches an internal temperature of 145 F.

Cover this roast with foil and let it stand for 10 minutes before carving.
