Low-Maintenance Pork Roast

Instructions

  1. Preheat the oven to 450 F.

  2. Place the roast in a shallow pan.

  3. Combine olive oil, thyme, marjoram, garlic, dry mustard, salt, and pepper in a bowl to form a paste, then rub this mixture over the roast.

  4. Let the pork stand at room temperature for 30 minutes.

  5. Roast the pork for 20 minutes, then reduce the oven temperature to 300 F without opening the door.

  6. Continue roasting until the internal temperature reaches 145 F, which is approximately 18 to 23 minutes per pound.

  7. Cover the roast and let it rest for 5 to 10 minutes before carving.

  8. Alternatively, roast the pork at 350 F for 20 to 25 minutes per pound until it reaches an internal temperature of 145 F.

  9. Cover this roast with foil and let it stand for 10 minutes before carving.
