In a large saucepan, combine sugar, cornstarch, and salt; gradually blend in soy milk, stirring constantly to prevent lumps.

Cook the mixture over low heat, stirring constantly until thickened, then continue cooking for 2 to 3 additional minutes, stirring occasionally.

Remove from heat, stir in vanilla, and cool for 10 minutes, stirring occasionally.
