Low-Fat Spinach and Ricotta Pasta

Instructions

  1. Start boiling a large pot of salted water and cook pasta according to package directions.

  2. Heat oil in a large skillet over medium heat, then sauté onions and garlic until soft, about 5 minutes, ensuring garlic does not brown.

  3. Add spinach and basil to the skillet and stir until wilted.

  4. Stir in ricotta cheese, milk, and optional lemon juice and zest.

  5. Drain the pasta, reserving about 1/4 cup of the cooking water.

  6. Combine the cooked pasta and ricotta mixture in a large bowl, adding reserved water if needed to reach desired consistency.

  7. Serve immediately, garnished with fresh black pepper and optional Parmesan cheese.
