Low Fat Lemon Curd

Instructions

  1. Combine strained lemon juice and superfine sugar in a small saucepan; heat on low and stir until the sugar dissolves.

  2. Lightly beat eggs in a medium bowl.

  3. Remove syrup from heat, then slowly pour into beaten eggs while continuously whisking by hand for one minute.

  4. Return the mixture to the saucepan, incorporate lemon zest, and heat on low for approximately two minutes until it thickens.

  5. Remove from heat, transfer to a covered container to prevent skin formation, and refrigerate.
