Instructions

  1. Preheat the oven to 350 F, with racks in the upper and lower third.

  2. Cream butter and sugar using a mixer, then incorporate egg and vanilla.

  3. Whisk flour, baking powder, and salt in a separate bowl. Gradually add this mixture to the wet ingredients until dough forms.

  4. Shape dough into a disk, wrap it in plastic, and refrigerate for 2 hours.

  5. On a floured surface, roll chilled dough to 1/4 or 1/8-inch thickness. Use flour-dipped cookie cutters to make shapes, then re-roll any scraps.

  6. Place cutouts 1 inch apart on parchment-lined sheets. Bake for 9-10 minutes until edges are lightly browned. Cool for 1 minute before transferring to a wire rack to cool completely.
