Low-Fat Chicken Satay With Peanut Sauce

Instructions

Preheat the grill or broiler with cooking spray, and presoak 8 bamboo skewers for 30 minutes.

Cut chicken breasts into 8 strips and place in a resealable plastic bag.

Combine brown sugar, soy sauce, garlic, ginger, and lime juice; add this mixture to the chicken bag and marinate in the refrigerator for 1 hour.

For the sauce, mix brown sugar, soy sauce, garlic, peanut butter, and lime juice; stir until smooth, thinning with water as needed.

Thread the marinated chicken strips onto the presoaked skewers.

Grill or broil the chicken for 10 minutes, turning once.

Serve 2 skewers per person with the prepared peanut sauce on the side.
