Low-Fat Chicken Satay With Peanut Sauce

Instructions

  1. Preheat the grill or broiler with cooking spray, and presoak 8 bamboo skewers for 30 minutes.

  2. Cut chicken breasts into 8 strips and place in a resealable plastic bag.

  3. Combine brown sugar, soy sauce, garlic, ginger, and lime juice; add this mixture to the chicken bag and marinate in the refrigerator for 1 hour.

  4. For the sauce, mix brown sugar, soy sauce, garlic, peanut butter, and lime juice; stir until smooth, thinning with water as needed.

  5. Thread the marinated chicken strips onto the presoaked skewers.

  6. Grill or broil the chicken for 10 minutes, turning once.

  7. Serve 2 skewers per person with the prepared peanut sauce on the side.
