Low-Carb Chicken and Cauliflower Casserole
A low-carb chicken casserole features grated cauliflower rice, baked with cream, herbs, and a cheddar cheese topping.

Instructions

Preheat the oven to 325 F.

Cube and season chicken breasts with salt and pepper.

Heat olive oil in a skillet over medium heat, then add and stir the chicken.

Cook chicken for 10-12 minutes until browned and tender.

Stir heavy cream into the pan, scraping up browned bits.

Grease a 7x11 inch baking dish. Add grated cauliflower, then season with salt, pepper, basil, thyme, fresh parsley, and onion powder (if used), stirring to combine.

Top the cauliflower with the cooked chicken, cream, and pan juices.

Sprinkle with shredded cheddar cheese, cover with foil, and bake for 15-20 minutes.
