Low Calorie Jambalaya

Instructions

  1. Heat a large nonstick-sprayed Dutch oven over medium-high heat.

  2. Brown chicken sausage and chicken; remove and set aside.

  3. Add canola oil to the pan; sauté celery, green pepper, and garlic for 3-5 minutes until tender.

  4. Add thyme and rice; cook for 3 minutes.

  5. Stir in the cooked sausage, chicken, chicken broth, tomatoes, salt, black pepper, and red pepper.

  6. Cover and simmer on low for 35-40 minutes until liquid is absorbed.

  7. Add shrimp; cook 3-5 minutes more until bright pink.
