Instructions

  1. In a large nonstick pot, heat garlic and onions for 3 to 4 minutes.

  2. Add water and carrots, stirring and cooking for an additional 3 to 4 minutes.

  3. Stir in green bell pepper, red bell pepper, and soy sauce, heating for 1 to 2 minutes.

  4. Reduce heat to medium-low; add all remaining ingredients except green onions.

  5. Cover and simmer for 25 to 40 minutes.

  6. Adjust seasonings. Garnish with green onions, adding optional cheese or sour cream if not following a vegan diet.
