Instructions

  1. Heat 1 tablespoon canola oil in a large nonstick skillet over medium heat.

  2. Add 1 (16-ounce) package frozen Asian stir-fry vegetables and cook, stirring, for 5 minutes until crisp-tender.

  3. Stir in 2 to 3 cups cooked rice and cook for 2 to 3 minutes.

  4. Push the rice and vegetables to the pan's edge, clearing the center; add a drizzle of oil if dry.

  5. Scramble 2 large eggs in the center until solidified.

  6. Combine the scrambled eggs with the rice and vegetables.

  7. Once eggs are fully cooked, drizzle with 1/4 cup low-sodium soy sauce.

  8. Serve hot, optionally garnished with cilantro, scallions, peanuts, or sesame seeds.
