Louisiana Remoulade Sauce

A classic Louisiana-style remoulade, this versatile sauce is an excellent accompaniment for seafood, fish, or burgers.

Instructions

  1. Finely chop cornichons, capers, green onion (if using), lemon juice, mustard, and parsley in a food processor.

  2. Add mayonnaise, paprika, and Tabasco sauce or cayenne to the processor; pulse to blend.

  3. Season with salt and pepper to taste.

  4. Transfer the mixture to a lidded container and serve immediately.
