Long-Grain Rice Chicken Risotto

A rich and delicious chicken risotto is prepared using an unconventional method with long-grain white rice.

Instructions

  1. Cut chicken breasts into 1 1/2-inch pieces and season with salt and pepper.

  2. Heat olive oil in a heavy saucepan over medium heat.

  3. Sauté onion and garlic for 5 minutes until tender, then add chicken and cook for 3 minutes until lightly browned.

  4. Stir in rice and cook for 2 minutes until coated.

  5. Gradually add chicken broth, about 1 cup at a time, stirring constantly and allowing each portion to absorb before adding more. Continue for approximately 25 minutes until the rice is tender.

  6. Stir in basil, cheese, and butter until melted.

  7. Remove from heat, cover, and let stand for 5 minutes before serving.
