Lofthouse Cookies
A copycat version of soft, delicious frosted sugar cookies, similar to those found in grocery stores.

Instructions

Preheat the oven to 325°F and line two baking sheets with parchment paper.

In an electric mixer, beat sugar, butter, and sour cream until light and fluffy, then mix in egg and vanilla.

In a separate bowl, whisk together cake flour, baking powder, baking soda, and salt, then gradually add this dry mixture to the wet ingredients and mix until just combined.

Scoop two tablespoon portions of dough, roll into balls using lightly floured hands, and place them on the prepared baking sheets, spaced two inches apart.

Dip the bottom of a glass in flour and gently press each dough ball to flatten evenly.

Bake for 15 to 17 minutes until the cookies are just set and the bottoms are lightly browned; let them cool on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.

For the frosting, combine confectioners' sugar, butter, 1 tablespoon heavy cream, vanilla, and food coloring in an electric mixer, beating until light and fluffy, adding more heavy cream if needed for desired consistency.

Once cookies are completely cool, spread frosting over the tops and garnish with sprinkles.

Store cookies in a single layer in an airtight container.
