Lobster Stew

Brown the cubed lobster meat in 4 to 6 tablespoons of butter.

Gently heat milk in a separate pan, avoiding a boil.

Combine the lobster with the hot milk and simmer for 5 to 10 minutes.

Stir in heavy cream, bringing the mixture almost to a boil before lowering heat.

Season with salt, pepper, and paprika; optionally incorporate a dash of sherry.
