Loaded Vegetable Meatloaf

Instructions

  1. Preheat the oven to 350 F.

  2. In a large bowl, thoroughly combine ground beef and pork.

  3. Finely chop the peeled onion and seeded bell pepper; then peel and shred the potato and carrots.

  4. Add all chopped/shredded vegetables, vegetable broth, salt, herb seasoning, pepper, and breadcrumbs to the meat.

  5. Whisk an egg and mix it into the bowl along with 1/3 cup ketchup.

  6. Using your hands, blend all ingredients until well combined.

  7. Press the mixture into a greased 9x5x3-inch meatloaf pan, or form into a loaf on a foil-lined baking pan.

  8. Bake for 1 hour.

  9. Drain excess grease, spread the remaining 1/3 cup ketchup over the loaf, and bake for an additional 20 to 30 minutes.
