Loaded Vegetable Meatloaf
This nutritious and delicious meatloaf incorporates various chopped and shredded vegetables, making it appealing even to picky eaters.

Instructions

Preheat the oven to 350 F.

In a large bowl, thoroughly combine ground beef and pork.

Finely chop the peeled onion and seeded bell pepper; then peel and shred the potato and carrots.

Add all chopped/shredded vegetables, vegetable broth, salt, herb seasoning, pepper, and breadcrumbs to the meat.

Whisk an egg and mix it into the bowl along with 1/3 cup ketchup.

Using your hands, blend all ingredients until well combined.

Press the mixture into a greased 9x5x3-inch meatloaf pan, or form into a loaf on a foil-lined baking pan.

Bake for 1 hour.

Drain excess grease, spread the remaining 1/3 cup ketchup over the loaf, and bake for an additional 20 to 30 minutes.
