Loaded Cauliflower Bake

Instructions

Preheat the oven to 375 F.

Toss cauliflower florets with olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until tender.

Melt butter in a saucepan, cook garlic for 2-3 minutes, then stir in flour, salt, and pepper for 2 minutes.

Gradually whisk in milk until the sauce thickens.

Reserve 1/2 cup shredded cheese and a few tablespoons of crumbled bacon for topping.

Add the remaining cheese, bacon, and green onions to the sauce; cook until cheese melts, then remove from heat and cool for 10 minutes.

Stir sour cream into the sauce, then fold in the roasted cauliflower; adjust seasonings to taste.

Transfer the mixture to a greased 2-quart baking dish, top with reserved cheese and bacon.

Bake for 15 minutes, or until hot and bubbly.

Garnish with green onion tops or parsley, if desired, then serve.
