Loaded Cauliflower Bake

Instructions

  1. Preheat the oven to 375 F.

  2. Toss cauliflower florets with olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until tender.

  3. Melt butter in a saucepan, cook garlic for 2-3 minutes, then stir in flour, salt, and pepper for 2 minutes.

  4. Gradually whisk in milk until the sauce thickens.

  5. Reserve 1/2 cup shredded cheese and a few tablespoons of crumbled bacon for topping.

  6. Add the remaining cheese, bacon, and green onions to the sauce; cook until cheese melts, then remove from heat and cool for 10 minutes.

  7. Stir sour cream into the sauce, then fold in the roasted cauliflower; adjust seasonings to taste.

  8. Transfer the mixture to a greased 2-quart baking dish, top with reserved cheese and bacon.

  9. Bake for 15 minutes, or until hot and bubbly.

  10. Garnish with green onion tops or parsley, if desired, then serve.
