Loaded Baked Potato Skins With Cheese and Bacon

Instructions

  1. Preheat oven to 400°F. Scrub and dry potatoes, then rub with olive oil, salt, and prick with a fork. Bake on a rack for 1 hour or until tender.

  2. While potatoes bake, dice and cook bacon in a skillet over medium-low heat for 7-9 minutes until crisp. Drain bacon on paper towels and reserve drippings.

  3. Once potatoes are cool, halve them and scoop out the flesh, leaving 1/4-inch shells. Brush shells inside and out with reserved bacon drippings, then season with salt and pepper.

  4. Arrange cut-side down on a baking sheet and bake for 7 minutes, then flip and bake for another 4-5 minutes until edges brown. Reduce oven to 350°F.

  5. Fill shells with cheese. Return to the 350°F oven for 7-10 minutes, until cheese melts.

  6. Top melted cheese with bacon and green onion, then add a scoop of sour cream and additional green onion.
