Lo Sfincione: Original Sicilian Pizza

A traditional sfincione, or Sicilian-style pizza, features a homemade yeast crust topped with tomato sauce, cheese, and anchovies.

Instructions

  1. Preheat the oven to 450 F.

  2. Form flour into a well, add dissolved yeast, salt, and water; mix and knead until smooth, adding water if necessary. Cover and let rest for at least 3 hours.

  3. Heat 2 tablespoons olive oil in a skillet; sauté sliced onions until translucent, about 8-10 minutes. Stir in tomatoes and garlic, breaking down the tomatoes, and simmer until the sauce thickens, 15-20 minutes.

  4. Grease a baking sheet with olive oil. Press the rested dough into the pan to form a 1-inch crust.

  5. If using, distribute anchovy pieces evenly over the dough.

  6. Layer a quarter of the grated cheese over the crust, then a thin coat of tomato sauce.

  7. Top with the remaining cheese, breadcrumbs, and oregano, then drizzle with olive oil.

  8. Bake for about 15 minutes until the cheese melts and breadcrumbs are lightly browned.

  9. Cut into squares and serve.
