Lithuanian Pancake - Blynai or Sklindziai

These Lithuanian blynai, also known as sklindziai, are traditional pancakes enjoyed on Shrove Tuesday.

Instructions

  1. Beat egg yolks until light in a medium bowl.

  2. Mix in flour, sour cream, milk, and salt until smooth.

  3. In a separate bowl, beat egg whites until stiff.

  4. Gently fold the beaten egg whites into the yolk mixture.

  5. Heat butter in a nonstick skillet; drop generous spoonfuls of batter onto it.

  6. Fry until golden on both sides.

  7. Serve hot with honey or preserves.
