Instructions

  1. Combine olive oil, lime juice, zest, fresh basil, optional bourbon, salt, and pepper in a bowl.

  2. Place tilapia fillets in a resealable bag with the marinade, ensuring even coating. Seal and refrigerate for 30 minutes.

  3. Preheat the grill to medium-high heat.

  4. Remove fillets from the bag, then transfer the marinade to a saucepan. Boil the marinade, reduce heat, and simmer for 5 minutes. Keep warm.

  5. Grill tilapia fillets over high heat for 3 to 5 minutes per side, or until opaque and reaching 145 F.

  6. Serve the grilled tilapia immediately, topped with the cooked marinade.
