Instructions

Select fresh, full-bloom lilac florets; detach purple florets from stems, discarding green parts, and rinse thoroughly.

Combine sugar and water in a saucepan; bring to a boil over medium heat, stirring until sugar dissolves.

Add rinsed lilac florets, stir, cover, then simmer for 5 minutes over reduced heat.

Remove from heat, keep covered, and steep for 3 to 8 hours to allow flavor infusion.

Strain the syrup through a fine-mesh strainer into a bowl, ensuring all liquid passes through.

Transfer the finished lilac syrup to an airtight container and refrigerate for up to two weeks.
