Preheat the oven to 440 F (220 C).

Whisk chickpea flour and a pinch of salt into water in a bowl. Cover the bowl and let the mixture rest for at least 4 hours.

Skim any foam from the rested batter. Stir in half of the oil and use the remaining oil to grease pans.

Pour the batter into the prepared pans, aiming for 1/4 to 1/2 inch thickness.

Bake for 20 minutes until golden and firm.

Slice and serve hot, seasoned with salt and pepper.
