Instructions

  1. Preheat the oven to 440 F (220 C).

  2. Whisk chickpea flour and a pinch of salt into water in a bowl. Cover the bowl and let the mixture rest for at least 4 hours.

  3. Skim any foam from the rested batter. Stir in half of the oil and use the remaining oil to grease pans.

  4. Pour the batter into the prepared pans, aiming for 1/4 to 1/2 inch thickness.

  5. Bake for 20 minutes until golden and firm.

  6. Slice and serve hot, seasoned with salt and pepper.
