Light Honey-Glazed Cornish Hens
Low-fat Cornish hens are glazed with a savory-sweet blend of orange juice, honey, garlic, soy sauce, thyme, and onion, then baked until tender.

Preheat the oven to 350 F.

Cut game hens in half along the backbone, remove skin, and trim excess fat.

In a microwave-safe dish, combine orange peel, lemon juice, orange juice concentrate, soy sauce, honey, garlic, onion powder, and thyme; microwave until boiling.

Lightly grease a baking dish. Divide chopped onion into four portions in the dish, then place hens bone-side down on the onions.

Pour the orange juice mixture over the hens.

Bake for 45 minutes, basting every 10 to 15 minutes; cover loosely with foil if browning too quickly.

Transfer hens and onions to warm plates.

Skim fat from the pan juices. Optionally, thicken juices with a cornstarch and cold water mixture.

Serve hens with the pan juices, hot cooked rice, and a green vegetable.
