Light Honey-Glazed Cornish Hens

Instructions

  1. Preheat the oven to 350 F.

  2. Cut game hens in half along the backbone, remove skin, and trim excess fat.

  3. In a microwave-safe dish, combine orange peel, lemon juice, orange juice concentrate, soy sauce, honey, garlic, onion powder, and thyme; microwave until boiling.

  4. Lightly grease a baking dish. Divide chopped onion into four portions in the dish, then place hens bone-side down on the onions.

  5. Pour the orange juice mixture over the hens.

  6. Bake for 45 minutes, basting every 10 to 15 minutes; cover loosely with foil if browning too quickly.

  7. Transfer hens and onions to warm plates.

  8. Skim fat from the pan juices. Optionally, thicken juices with a cornstarch and cold water mixture.

  9. Serve hens with the pan juices, hot cooked rice, and a green vegetable.
