Lentil Soup With Spinach and Spicy Sausage

Instructions

  1. In a large saucepan, sauté onions, celery, and carrots in olive oil until tender.

  2. Add sausage and garlic; cook until sausage lightly browns, about 1 minute.

  3. Stir in lentils, seasoning blend, cayenne, thyme, pepper, chicken broth, and tomatoes, then bring to a boil.

  4. Reduce heat to low, cover, and simmer for 1 hour, or until lentils are tender.

  5. Stir in salt and spinach.

  6. Cover and cook for an additional 10 to 15 minutes.
