Lentil Soup With Spinach and Spicy Sausage

In a large saucepan, sauté onions, celery, and carrots in olive oil until tender.

Add sausage and garlic; cook until sausage lightly browns, about 1 minute.

Stir in lentils, seasoning blend, cayenne, thyme, pepper, chicken broth, and tomatoes, then bring to a boil.

Reduce heat to low, cover, and simmer for 1 hour, or until lentils are tender.
