Lentil Soup With Smoked Ham Hock

Instructions

  1. Combine beef broth, chicken stock, thyme, black pepper, bay leaf, cayenne, and ham hock in a soup pot; bring to a simmer. Cover and cook on low for 90 minutes.

  2. Add onions, celery, and carrots; simmer covered for 30 minutes.

  3. Stir in lentils and simmer covered for another 30 minutes.

  4. Remove cover, skim any excess fat, and continue to simmer uncovered for 15 to 20 minutes until lentils are tender and pork falls off the bone.

  5. Adjust seasoning to taste and serve with fresh parsley.
