Instructions

  1. Preheat the oven to 400 F.

  2. Arrange potatoes in a single layer in a 9x13-inch baking dish.

  3. Whisk lemon juice, garlic, olive oil, water, and oregano in a bowl, then season with salt and pepper.

  4. Pour mixture over potatoes and toss to coat thoroughly.

  5. Cover with foil and bake for 25 minutes.

  6. Remove pan from oven, increase oven temperature to 425 F, carefully remove foil, and turn potatoes.

  7. Return to oven and roast for 20-25 minutes, turning occasionally, until potatoes are tender and crisp.

  8. Transfer to a serving dish.
