Lemon Sage Chicken Marinade

A simple and fast marinade featuring lemon and sage brightens plain chicken breasts.

Instructions

  1. Preheat oven to 400 F for baking.

  2. Puree garlic in a food processor, then add olive oil, honey, salt, and pepper, processing to combine.

  3. Add lemon zest, lemon juice, and sage, pulsing until the sage is rough-cut.

  4. Pour marinade into a freezer bag with chicken breasts, seal, remove air, and refrigerate for at least 6 hours or overnight.

  5. Let chicken sit at room temperature for 15 minutes before cooking; discard used marinade.

  6. For baking, place chicken on a foil-lined baking sheet with a rack.

  7. Bake for 40-45 minutes, or until the thickest part of the meat reaches 170 F; broil for a few minutes if crispy skin is desired.
