Lemon Rice Recipe

A quick South Indian lemon rice dish incorporates lemon juice, spices, nuts, and curry leaves for a flavorful side.

Instructions

  1. Heat ghee in a saucepan; add mustard seeds and cook until they pop.

  2. Stir in nuts until golden, about one minute.

  3. Reduce heat, add chilies (if desired), curry leaves, and ginger; sauté for one minute until fragrant.

  4. Stir in turmeric and golden raisins, then reduce heat to low.

  5. Pour in lemon or lime juice and cook on low heat, stirring frequently, for 4 to 5 minutes until combined and flavorful.

  6. Season with salt to taste and remove from heat.

  7. Pour the mixture over cooked rice.

  8. Sprinkle half of the lemon or lime zest onto the rice, adding dried cranberries now if using.

  9. Gently toss the rice to evenly distribute the spice mix. Garnish with the remaining lemon zest just before serving warm or at room temperature.
