Instructions

  1. Preheat the oven to 400 F.

  2. Whisk dry ingredients in a large bowl.

  3. Combine egg, yogurt, oil, lemon zest, and lemon juice in a medium bowl.

  4. Create a well in the dry ingredients; fold in the wet mixture until just moist.

  5. Spoon batter into a lined or greased 12-cup muffin pan, filling each cup 2/3 full.

  6. Bake for 15-18 minutes until a toothpick inserted into a muffin comes out clean.
