Lemon Poppy Seed Hamantaschen (Pareve or Dairy) Cookies

Instructions

  1. Preheat the oven to 350 F and line two baking sheets with parchment paper.

  2. In a large bowl, combine flour, confectioners' sugar, granulated sugar, poppy seeds, baking powder, salt, and lemon zest.

  3. In a separate bowl, whisk oil, egg, orange juice, and vanilla.

  4. Add the wet mixture to the dry ingredients; mix until a dough ball forms.

  5. Briefly knead the dough until uniform.

  6. Divide the dough into two disks, wrap, and chill for at least 20 minutes.

  7. On a floured surface, roll one dough disk to 1/8-1/4 inch thick. Cut 2 1/2-3 inch circles, re-rolling scraps as needed.

  8. Transfer dough circles to prepared baking sheets and place 1/2-3/4 teaspoon lemon curd in each center.

  9. Fold edges to form a triangle, pinching corners to seal.

  10. Bake for 15-18 minutes until firm and lightly golden.

  11. Cool hamantaschen on a wire rack.
