Lemon Italian Ice

Instructions

  1. Boil 4 cups of water, then stir in 1 cup of granulated sugar until it dissolves.

  2. Once cooled, mix in 1 tablespoon of lemon zest and 3/4 cup of lemon juice.

  3. Pour the mixture into a baking pan and freeze.

  4. Stir the crystals every 30 minutes for about 3 hours until fully crystallized but not solid; scrape with a fork as it freezes if stirring becomes difficult.

  5. Scoop into cups to serve.
