Instructions

  1. Combine 2 cups powdered sugar, butter, lemon juice, salt, marshmallow cream, extracts, lemon zest, and food coloring in a large mixing bowl; mix until smooth.

  2. Gradually add remaining powdered sugar, scraping bowl sides, until well blended; adjust lemon extract and coloring to taste.

  3. Scoop and roll the mixture into 1-inch balls.

  4. Arrange balls on a parchment-lined baking sheet and refrigerate for at least 1 hour until firm.

  5. Melt candy coating in a microwave-safe bowl, stirring every 45 seconds.

  6. Dip each cream ball into the melted coating, removing excess, then place on the baking sheet.

  7. Optionally, top with candied lemon peel before the coating sets, then repeat with remaining balls.

  8. Refrigerate for 20 minutes to completely set the coating.
