Lemon Bars

Instructions

  1. Preheat the oven to 325°F. Prepare a 9x13-inch baking pan by greasing it and lining with parchment paper, allowing some overhang.

  2. For the crust, combine 2 cups flour, 1/2 cup granulated sugar, and 1/2 teaspoon salt. Stir in melted butter and vanilla, then press the mixture evenly into the prepared pan.

  3. Bake the crust for 20 minutes until set, then transfer to a rack.

  4. Prepare the filling by whisking together 2 1/2 cups granulated sugar and 2/3 cup flour in a large bowl. Whisk in eggs, then add lemon juice until the mixture is smooth.

  5. Pour the lemon filling over the warm crust.

  6. Return the pan to the oven and bake for 25 to 30 minutes, or until the filling is completely set.

  7. Cool the bars completely on a rack before slicing. Optionally, sift confectioners' sugar over them.
