Lemon Barley Water
Lemon-barley water is a refreshing, old-fashioned Australian non-alcoholic drink that was once believed to be a potent healing tonic.

Instructions

Start boiling 6 cups of water in a 2-quart saucepan.

Rinse barley under cold water until clear, then add it to the saucepan with lemon zest.

Once boiling, reduce heat and simmer for 10 minutes.

Strain the liquid into a heatproof bowl, reserving the barley.

Stir honey into the liquid until dissolved, then add lemon juice.

Serve hot, or let cool to room temperature before bottling and refrigerating until chilled.
