Lemon and Herb Roasted Chicken

Instructions

  1. Preheat the oven to 350 F (180 C/Gas 4).

  2. Rub the chicken's interior with lemon juice, salt, and pepper; then stuff the cavity with onion, celery, and parsley sprigs.

  3. Mix melted butter with chopped parsley, rosemary, and thyme.

  4. Brush the chicken with some butter mixture, then place it in a shallow roasting pan.

  5. Roast for approximately 20 minutes per pound until the internal temperature reaches 165 F.

  6. Baste the chicken periodically with the remaining butter and herb mixture.

  7. Serve.
