Lemon and Herb Roasted Chicken

Preheat the oven to 350 F (180 C/Gas 4).

Rub the chicken's interior with lemon juice, salt, and pepper; then stuff the cavity with onion, celery, and parsley sprigs.

Mix melted butter with chopped parsley, rosemary, and thyme.

Brush the chicken with some butter mixture, then place it in a shallow roasting pan.
