Lemon and Garlic Broiled Halibut Fillets With Roasted Potatoes

Instructions

Preheat the oven to 400 F.

Combine potatoes, olive oil, 3/4 teaspoon salt, 1/4 to 1/2 teaspoon pepper, 2 minced garlic cloves, and 1 tablespoon parsley in a bowl, tossing to coat.

Arrange potatoes in a single layer on a baking sheet and roast for about 1 hour, turning every 15-20 minutes, until tender and golden.

Remove potatoes, cover with foil, and keep warm.

While potatoes roast, place halibut fillets skin-side down on a greased baking pan, seasoning with salt and pepper.

Melt butter with 3 minced garlic cloves, lemon juice, basil, and 1 tablespoon parsley in a small saucepan over low heat for 1-2 minutes until garlic softens.

Spoon some butter mixture over each fillet, then cover and refrigerate the fish until potatoes are done.

Once potatoes are removed, preheat the broiler to high (about 500 F).

Broil halibut fillets for approximately 10 minutes, or until they flake easily.

Garnish with parsley and lemon slices if desired.
