Preheat the oven to 400 F.

On a floured surface, roll each pastry round to 12 inches, then cut out four 6-inch rounds per sheet, utilizing scraps.

Combine turkey with gravy in one bowl, and mashed potatoes with parsley in another.

Mound 1 1/2 tablespoons of mashed potatoes on each 6-inch round, then add 1 tablespoon of dressing and 2-3 tablespoons of the turkey mixture, seasoning with salt and pepper.

Wet pastry edges with water, fold over, seal with a fork, and cut a few top slits.
