Instructions

  1. Start cooking rice according to package directions.

  2. Melt butter in a large skillet, then add curry powder and stir for 2 minutes.

  3. Add chopped onion and cook until soft and translucent.

  4. Stir in flour and ginger.

  5. Pour in chicken broth and pineapple, mixing until no clumps remain. Bring to a boil, then reduce heat and simmer for 5 minutes.

  6. Stir in diced turkey, cover, and simmer for 10 minutes, or until heated through.

  7. Add lemon juice and stir.
