Leftover Tamal Casserole

A cheesy casserole combines leftover tamales, vegetables, and cheese for a satisfying meal.

Instructions

  1. Preheat the oven to 350 F.

  2. Remove tamales from their husks and cut into bite-sized pieces.

  3. Heat olive oil in a skillet; sauté chopped onions until soft. Add diced garlic and poblanos, cook for several minutes, then remove from heat, stir in cream cheese, and season.

  4. In a separate bowl, whisk together sour cream, salsa, and chicken broth.

  5. Lightly grease a 2-quart casserole dish. Layer 1/3 of the tamales, half of the onion-pepper mixture, and 3/4 cup of grated cheese.

  6. Add another 1/3 of the tamales, the remaining onion-pepper mixture, and 3/4 cup of cheese.

  7. Top with the final tamale portion, then pour the sour cream mixture over, and sprinkle with the remaining 1/2 cup of cheese.

  8. Cover the casserole loosely with foil and bake for 30 minutes. Uncover and bake for an additional 15 minutes, until bubbly and the cheese is melted.
