Instructions

  1. Preheat the oven to 350 F and grease a 2-quart casserole dish.

  2. In a skillet, melt butter and cook onion until tender, then add mushrooms and sauté until lightly browned.

  3. Combine diced lamb, cooked rice, undrained tomatoes, salt, pepper, curry powder, and the sautéed onion and mushroom mixture with its liquid in a large bowl; mix thoroughly.

  4. Transfer the mixture to the prepared casserole dish and top with grated cheese.

  5. Bake for 30 minutes, or until hot and bubbly.
