Leek & Pork Stir-Fry

Instructions

  1. Trim fat from pork, then cut into 1/4-inch slices and then thin strips (freezing the pork for 20 minutes first can aid in cutting).

  2. Place sliced pork in a bowl; drizzle with soy sauce, sesame oil, and chile oil (if using). Toss to coat, then cover and chill for 30 minutes to 8 hours.

  3. Trim leeks, halve lengthwise, and thinly slice on the diagonal, stopping when the dark green part becomes ragged or stiff.

  4. Rinse sliced leeks in a bowl of cool water by swishing and lifting them out to drain on a clean towel, ensuring dirt remains in the bowl.

  5. Heat 1 tablespoon canola oil in a wok or large pan over high heat. Add leeks and cook, stirring frequently, until tender and slightly browned (8-10 minutes). Transfer leeks to a plate.

  6. Return the pan to heat and add the remaining 1 tablespoon oil. Add pork and cook, stirring frequently, until cooked through and browned (3-5 minutes).

  7. Return the leeks to the pan, stir to combine and reheat, then serve immediately.
