Instructions

  1. Grate the yellow portion of the lemon peel.

  2. In a saucepan, heat milk, 1 cup sugar, a cinnamon stick, and lemon zest on medium-high; once boiling, reduce heat and simmer for 5 minutes, then cool.

  3. After cooling, remove the cinnamon stick and strain the milk to remove the lemon zest.

  4. Separate egg whites, then beat them with the remaining sugar until stiff peaks form.

  5. Fold the beaten egg whites into the milk mixture until homogenous, then cover and freeze for at least 2.5 hours.

  6. Before serving, mix the frozen dessert on low speed with an electric mixer; serve cold, optionally topped with powdered cinnamon.
