Instructions

  1. Preheat oven to 400 F.

  2. Place eggplants on a greased baking sheet and roast for 30 minutes until tender, then let cool.

  3. Peel the cooled eggplants or scoop the flesh from their skins.

  4. In a food processor, blend tahini, garlic, and peppers.

  5. Add the eggplant to the processor and blend thoroughly.

  6. Mix in the olive oil.

  7. Transfer the mixture to a serving bowl, then stir in lemon juice, salt, and pepper.
