Lasagna Soup

Instructions

  1. Heat olive oil in a large pot over medium-high heat.

  2. Cook onion for 5 minutes until softened, then add garlic for 1 minute until fragrant.

  3. Stir in tomato paste for 2 minutes until brick red.

  4. Add ground beef, salt, pepper, red pepper flakes, oregano, and rosemary; cook for 5 minutes, breaking up meat, until browned.

  5. Crush and add canned tomatoes with their juice.

  6. Stir in chicken stock and bring the soup to a low boil.

  7. Add lasagna noodles and cook until al dente according to package directions.

  8. Combine ricotta, Parmigiano-Reggiano, and mozzarella in a small bowl.

  9. Ladle soup into bowls, topping each with the ricotta mixture and basil leaves.
