Preheat a grill to high heat.

Trim fat from the lamb chops.

Combine orange zest, thyme, garlic, salt, pepper, Dijon mustard, and brown sugar in a bowl to create the glaze.

Brush half of the glaze onto the chops, then grill for 2 minutes per side. Turn, apply the remaining glaze, and continue grilling until the internal temperature reaches 135F for rare or 145F for medium.

Cover and rest the chops for 5 minutes before serving.
