Instructions

  1. Dissolve salt in filtered water.

  2. Wash green beans and snap off their stem ends.

  3. Tightly pack the green beans into a clean quart jar by first laying it on its side, then setting it upright.

  4. Pour the salt brine over the beans to ensure complete coverage, then cover the jar loosely with a lid.

  5. Place the jar on a plate and let it ferment at room temperature for 24 to 48 hours.

  6. After 24 hours, check for bubbles and a mild sour smell.

  7. Once active fermentation is evident, transfer the jar to the refrigerator door for continued slow fermentation.
