Instructions

Preheat the oven to 350 F.

Beat softened butter, granulated sugar, and light brown sugar for 2-3 minutes until fluffy.

Add eggs, molasses, and vanilla; beat for 30-60 seconds until combined, scraping the bowl as needed.

In a separate bowl, whisk together all-purpose flour, brewer u2019s yeast, flaxseed meal, cinnamon, ginger, baking soda, and salt.

Add the dry mixture to the butter mixture and beat on low speed for 15-30 seconds until nearly combined.

Mix in rolled oats, semisweet chocolate chips, and chopped toasted walnuts on low speed for about 15 seconds.

Cover the dough and chill in the refrigerator for 30 minutes until firm.

Scoop 1.5-tablespoon portions of dough and place them 1.5-2 inches apart on parchment-lined baking sheets.

Bake one pan at a time for 9-12 minutes, rotating 180 degrees halfway through, until edges are golden and centers are slightly soft.

Cool cookies on the pans for 5 minutes, then serve warm or transfer to a wire rack to cool completely.
